Crockpot Roasted Sugared Nuts

Hello readers! I just got back from a well-needed vacation to the midwest. Detached myself from the computer and the phone (well, as much as possible) thus explaining my absence from here for a few weeks.

Well, I’m back. OK, partially. Still dealing with a bit of a migraine headache and some fatigue for the last few days but trying to push through as much as possible. I have TONS of new photos and reviews from my trip to share with you all!sugar roasted nuts in the crockpotToday, I’m going to be sharing this recipe for a make-at-home version of those sugar-roasted nuts you can get at the ballpark. You know the ones I mean. Even if the stand is on the third baseline, you can smell it from the first base side. Those sugar-roasted nuts. The little nuggets of goodness that come in the papery cone holders.

Now, based on my personal preference, I would tweak the measurements of the ingredients if I were to do this again. I would definitely lower the amount of ground ginger and cloves in it because I didn’t get as much of the cinnamon taste as I love. But, it’s a great start. Recipe: Cauliflower Crust Pizza

Last night I told you about my renewed plan to get healthy. Here it is in summary:

  • Step 1 – Start seeing a dietitian.
  • Step 2 – Write down what I eat.
  • Step 3 – Keep to 1,500 calories per day (no restrictions on carbs or other food groups, just watch my portion sizes. Eat slowly and take breaks during my meals.)
  • Step 4 – Plan my meals for the week.

Another one of my takeaways is to try to come up with our dinner menus on the weekends. Brett and I often find ourselves wandering the grocery store after work and opting for some bad meal choices. This way, we plan in advance and have everything on hand for later in the week.

Here is one of the first recipes we tried and it is a WINNER! I’ve heard of the rumors of this one for a little while now but was reluctant to try it. Really? A pizza that doesn’t use dough for a crust, but instead uses cauliflower. So, it’s low carb and veggie friendly? Yup!

Recipe: Hershey’s Especially Dark Chocolate Layer Cake

Chocolate layer cake coolingI love dark chocolate. So whenever I get one of those Hershey’s sampler bags with milk chocolate, Special Dark, Mr. Goodbar and Krackle, I always hoard the Special Dark mini-bars. I absolutely adore them!

A few weeks ago, I got myself my first set of 8-inch cake pans at the President’s Day Sale at the nearby Calphalon Outlet Store. I have been searching for the first layer cake recipe to try and when I came across this one by Hershey’s, I knew I had found gold! Now, while the recipe calls for a 9-inch set of pans, I was able to make it work in my smaller set. I just had to carefully level the cakes, once they had cooled, since they had risen so much from the pans.

Recipe: German Pancake in a Mug

German pancake in a mugBy now, you all know how much I adore German pancakes, also called Dutch Babies, from these posts here and here. These huge concoctions of egg, milk, butter and a little bit of flour are oven-baked to a golden marvel.

Today, I wanted just a smackerel (I think that might be a Pooh Bear word) of that Dutch Baby taste so I recalled a pin on Pinterest that I found a few weeks ago for a German Pancake baked in a mug. The recipe is an adaptation of one originally done on Bittersweet: Sugar and Sarcasm blog. I ended up tweaking my version a bit by using two full eggs.
