Review: Fresh-A-Peel Inside Pollo Campero

Exterior of Pollo Campero at Downtown Disney in FloridaSeriously, it seems like it’s been decades since I was last at Disney World. In reality, it’s only been about two months since my brief little work-cation allowed me to drop by Downtown Disney and Epcot.

I flew into Orlando early in the day so I had the remaining hours to myself (as I didn’t have any work duties until the next morning). So, after checking into my (non)-Disney hotel near the airport, I took a little nap since the hot, humid Florida weather was such a drastic difference for me.

I decided to spend the rest of my day going to the Premium Outlet Mall, as I had heard that Disney runs a retail store there. I wanted to check it out so I drove on over. While there were some great deals on T-shirts and gear for the little Mickey-philes, nothing overly piqued my interest. After, I drove down Hotel Plaza Boulevard, a winding, tree-lined avenue that flows directly into the Marketplace at Downtown Disney.

There have been tons of changes at Downtown Disney within recent years – especially to its dining options. Most of the times, we don’t make it anywhere else butĀ Earl of Sandwich and Ghirardelli. As I was on a limited diet (no dairy products) at this time, I opted to try the eats at one of DD’s newest establishments that took over the spot that once was the McDonald’s. Let’s take look inside Fresh-A-Peel at Pollo Campero...

White Bean and Garlic Scape Hummus

Cannellini bean and garlic scape hummusDuring the first few weeks of our CSA, we were receiving tons of garlic scapes. I already showed you the easy pesto you can make but another super quick and very tasty recipe is this cannellini, or white bean, and garlic scape hummus dip that I found on Farmer Dave’s recipe section that is originally from the New York Times.

Ingredients

  • 1/3 cup sliced garlic scapes (3-4 scapes)
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 teaspoon course sea salt
  • Ground black pepper, to taste
  • 1 15-ounce can of cannellini beans, rinsed and drained
  • 1/4 cup of extra virgin olive oil

Weigh-in: Through Week 4

Well, I made it to 30 since the last time I wrote an “Eating Restructuring Plan” update. The best news is that Brett gave me the bestest gift for my b-day – a 4-day cruise on the Disney Dream to the Bahamas and Castaway Cay next December! That gives me about 300+ days to get in 2-piece body condition.

Yes! You heard right! I’m going to try and tone my body so I can wear a 2-piece for the first time in my life. I don’t know if it will happen but with all the Zumba on Wii that I have been doing lately, it is a good possibility.

And yes, I did get Zumba for Wii…and it’s AMAZING! I forgot how much that workout – for even 15 to 20 minutes – kicks your butt. I like how the game gives you various level options from beginner to expert. So someone like me who has done Zumba before can opt for higher level workouts, while Brett, who admirably is learning how to shake his little groove thing, gets quite a vigorous workout on beginner.

Here’s a little video of me doing the beginner routine “La Twist de la Munequita:”
